Aviyal is a mixed vegetable dish common in south india… This dish contains most of all the vegetables, so a nutrient food too… It is also an unavoidable dish in sadya or feast.. it is generally eaten with rice..
Ingredients for south indian aviyal
Drumsticks / Moringa – 3
Carrot – 3
Beans – 8
Elephant yam / Chena – 100 gm
Raw plantain – 1
Lobia / payar – 8
Turmeric powder – 1tsp
Grated fresh coconut – 1½ cup
Green chillies – 5 sliced
Curds – 1 cup (lightly sour)
Salt to taste
Curry leaves – few
Oil
How to make Aviyal-step by step instruction
1. Wash the vegetables and slice it lengthwise in to small pieces (as the length of our little finger)…
2. In a wide bottomed pan cook the vegetables with 1 and 1/2 cup of water, enough salt and turmeric powder…
3. Make a paste of grated coconut and greenchilli..
4. Add this paste to the cooked vegetables and stir well… boil it…
5. When most of the water evaporated add the curd and warm it ( donot allow to boil ) continue stirring..
Then switch off the flame… add coconut oil and curry leaves and mix well…
Serve hot….
Notes:
If you need you can add bitter guard too… add you can also use mango or tamarind instead of curd….

There are different types of upma, among them the most common one is rava upma with semolina which is usually called rava or suji in India… Its a usual breakfast of south India.. Its very easy to make and also very tasty…..
Ingredients
Rava – 1 cup
Mustard seeds – 1 tsp
Ginger – 1 tsp
Green chilli – 2 nos sliced
Onion – 1 sliced (if you are using shallots then take 6 nos)
Curry leaves – few
Grated coconut – 1/2 cup
Oil
Salt to taste
Method
1. Heat oil in a pan and put the rava and stir well… roast it until it becomes golden brown in colour…
Keep aside….
2. In a wide bottomed pan heat oil and splutter the mustard seeds then add curry leaves, ginger sliced, onion sliced, green chilli sliced and slaute for 2 min….
3. Add Water and enough salt and let it to boil….
4. Then add the rava and mix quickly in medium flame… don’t allow to form lumps… also check the salt..
5. When all the water is absorbed its done… switch off the flame…
Put the grated coconut and mix well…..
Serve hot with pappad….
Notes:-
1. If you need you can add chopped vegetables while adding water…
ie sliced beans, carrot, tomato, capsicum etc….
2. if you need you can add cumin at the time of slightly frying onions, green chillies etc… 1 tsp is enough….
Semiya payasam is my favorite.. Its delicious and also easy to make.. try this…
Ingredients for semiya payasam
Semiya / Vermicelli – 1 packet
Sugar – 1 cup
Milk – 1 L
Ghee – 2 tsp
Cashew nuts – few
Raisins – few
Elakya – few
Water – 1 cup
Method
1. Heat ghee in a pan and fry the cashew nuts, raisins until it becomes golden brown in colour…. keep it aside…
2. Heat ghee again in pan and fry the semiya / vermicelli until it becomes golden brown slightly….stir it continuously until done.. Then keep it aside…
3. Boil the milk along with water in low flame…. then add semiya or vermicelli and stir continuously…
cook semiya until it becomes soft…..
4. Powder the elakya and add it along with sugar… stir well continuously for 5 mins….
5. Add the fried cashew nuts and raisins and switch off the flame and mix it well….
Semiya payasam is ready….
Notes: while cooling , the payasam becomes thicker so add little more than the consistency you need…
Chakk appam or chakka varatti appam is making from chakka varattiyathu ( Jack fruit jam)…. Its a delicious snack.. we can make it for teatime…
Ingredients for chakka appam
Ripe jackfruit
Jaggery (optional)
Water – 1 cup
Ghee – 1 cup
Rice flour – 1 cup (for 2 cup of chakka varattiyathu)
Coconut pieces ( small )
Salt a pinch
Banana leaves few
Method
1. First of all we have to make chakka varattiyathu.. for that cut the jack fruit and deseed it….
2. Cook it in less water.. Steam cooking is the better way…
3. Heat ghee in a wide bottomed pan or uruli.. and transfer the cooked jack fruit to it and stir continuously and allow all the water to vapourise…
4. If you need more sweetness then you can add jaggery to it by melting it…
5. Add ghee little by little and stir well continuously in medium flame until you get a dark brown thick paste…
6. Switch off the flame and allow it to cool…
Now chakka varattiyathu is ready….. 🙂
7. After cooling, take 2 cup of chakka varattiyathu and add rice flour little by little and mix well….
8. Add a pinch of salt and the coconut pieces and mix well and make a smooth, not too thick not too loose dough…
9. Take the banana leaf , cut it into pieces and hold it over the flame and warm it..
10. Then take each pieces of banana leaf and put some paste in it and tie it on both sides as in the image…
11. Steam cook until its done, approximately 35 to 45 mins….

Ingredients for Spinach curry
Door dal – 1 cup
Spinach – 2 bunches
Green chillies – 2 sliced
Garlic – 4 sliced
Turmeric powder – 1/2 tsp
Chilly powder – 1/2 tsp
Grated coconut – 1/2 cup
Shallot – 2 ( 1 sliced and 1 to grind)
Jeera/ cumin seeds – a pinch
Mustard seeds – few
Dry red chillies – 1
Curry leaves – few
Salt to taste
Oil
Water ( 2 cup to cook and add 2 tbsp to grind)
Method
1. Wash the spinach well and cut it into tiny pieces…
2. Cook the dal in enough water…
Add Spinach, green chillies, garlic, turmeric powder and chilli powder to it… mix well.. cook for sometime, up to 15 mins..
3. Grind grated coconut with 1 red chilli, 1 shallot, cumin seeds along with 2 tbsp water and little salt in a blender.. (if you want you can fry the shallot and red chilly which is adding to grind)…
4. Add this paste to the curry and stir well and add water according to the consistency you want add boil it…
5. Heat oil in a pan, splutter the mustard seeds and add red chilli, curry leaves and the sliced shallot.. fry this… and add it to the curry and mix well…
Our dish is ready… Switch off the flame…

Thorans are very simple dishes to make and its unavoidable with rice for most of us… so i decided to post some thoran recipes here.. some call it upperi…today i am putting beans thoran recipe and i will try to add most of the thoran recipes here as soon as possible.. 🙂
Ingredients for Beans thoran
Beans – 1/4 kg
Grated coconut – 1/4 cup
Green chillies – 2
Salt to taste
Water
Oil
Method
1. Chop nicely the beans and green chillies..
2. Heat a pan put beans and green chillies in it along with water and add required salt to it… cover the pan with a lid and cook it…
3. After cooking add grated coconut and sprinkle some oil and mix well and keep it in flame for 2 mins.. and switch of the flame… Dish is ready…
This dish can be made in different ways.. i like this way… i will give you some more options.. try these too….
Notes:
1. Coconut is optional if you don’t like it you can avoid that…
2. You can mix the grated coconut with turmeric powder, chilli powder(or red chilli) in a blender…. (don’t make a paste just mix it or you can do it with your hand also) and add that….
3. You can splutter mustard seeds, red chillies and curry leaves and can add to this….
4. You can finely add chopped onions if you need….
Ginger chicken is one of my favorite dish… its very easy to make this dish and i swear its too tasty…. try this dish at home….
Ingredients for Ginger chicken
Chicken (born less pieces)
Green chilli – 6 (3 nicely chopped and 3 to grind)
Coriander Leaves few
Curry leaves few
Cornflour or maida – 2 tbsp
Ginger garlic paste – 1 tbsp
Ginger – 100 gm (chopped in to fine pieces)
Onion – 2 (1 nicely chopped and 1 to grind)
Garlic – 1 tbsp (nicely chopped)
Pepper powder – 1 tsp
Vineger – 1 tbsp
Soya sauce – 1 tbsp
Chilli sauce – 1 tsp
Method
1. Wash the chicken well then take chicken add soya sauce, vinegar, corn flour or maida, salt mix well and keep aside for 20 min….
2. Grind few curry leaves, coriander leaves , onion and green chillies in a blender…. keep it aside….
3. Take a widely bottomed pan ( each chicken piece have to touch the bottom to cook well) add oil and heat it….
4. Add the marinated chicken pieces, fry the chicken till they become golden brown…..
5. Add ginger chopped, ginger garlic paste and mix well…..
6. Add the onion paste that we made earlier and mix well cook for 5 min till it stick to chicken…
7. Add the chopped onions and garlic, green chillies and add required salt to it…. Stir well…
8. Add chilli sauce and stir well for 5 mins…
9. Add pepper powder and finely chopped coriander leaves(little) and mix well for 5 mins….
Now our dish is ready…. Switch off the flame..
